  • 3 tbsp rapeseed or sunflower oil
  • 1 clove garlic peeled and finely sliced
  • 400 g tin chopped tomatoes
  • 6 large fresh basil leaves torn


  1. Heat the oil in a saucepan and fry the garlic over a medium heat for a couple of minutes until soft.
  2. Add the tomatoes and basil, and season. Cook for 12-15 minutes or until thick and glossy. Stir in a pinch of sugar if desired.

You can make this sauce in advance and store it in the fridge in a covered container for up to two days.
